Sashimi Over Micro Greens:
12 oz Raw sushi-grade bluefin tuna or Ahi tuna 1 lb Micro greens or "spring mix" 6 oz Heirloom tomatoes 3 Green onions 1 Tbs Sesame seeds 1 Tbs Olive oil 6 oz Ginger Miso Dressing
Prep: In a large saute pan add olive oil and heat on High for 3 minutes. Coat tuna with sesame seeds. Place tuna steaks in saute pan, sear on both sides for 4 minutes each. In a large mixing bowl add micro greens, sliced tomatoes, and Ginger Miso dressing. Toss well using tongs or serving utensils. Place salad in even portions on plates, keep chilled. Slice green onions, setr aside. Pull tuna from pan, slice into thin strips. Arrange salads by placing strips of tuna topped with a light sprinkle of green onion. Serve with extra dressing on the side.
