Grilled Chicken Skewers

Ingredients:

1 lb     Chicken breast (cubed)
2         Zucchini
2         Yellow Squash
24       Cherry tomatoes
12oz    Cilantro Lime Vinaigrette
24       Wooden or metal skewers

Prep: If using wooden skewers soak in warm water for 1 hour before assembling. Cut squash into 1" rounds, set aside. Cut cherry tomatoes in half, set aside. Assemble skewers with an assortment of chicken & veggies, place in extra large plastic freezer zip lock bag. Shake cilantro Lime Vinaigrette well, add to skewers, seal, let marinate in refrigerator for 3 hours. Prepare grill by preheating on high for 15 minutes, reduce flame to low. Remove skewers from marinade, shake lightly to allow excell oils to drip off. Cook skewers on grill for 20 minutes rotating often. Serve immediately.
