Robust balsamic vinegar with a touch of honey and cinnamon. Excellent tossed with baby spinach, walnuts, and farm fresh goat cheese. The way our vinaigrettes have been done in the past is basically like something you would do in your own home, pour some vinegar and spices into a bottle, then top it off with some oil. When brands grow, there is a point where they go from that homemade feel to a more industrial feel and appearance and we are very careful about transitioning our products to a more industrial level of production.
We were faced with the reality that as we grow, we would not be able to maintain the two step fill to the vinaigrettes, so all options (including discontinuing the vinaigrettes completely) were discussed. The end result was to move into the one stage fill for vinaigrettes, which means it needs to be mixed (oil and vinegar) in one kettle, and filled using one nozzle in the production line. The recipe for all vinaigrettes have not changed, but, the appearance for the time being has.
There is still a small chance that we will be able to return to the two stage fill with the vinegar and oil separated, if we are able to find a co-packer with that capability (essentially 2 machines with 2 separate hoses and nozzles), typically bottling lines have 1-7 nozzles, all drawing from one kettle with one recipe in it, not two kettles with oil in one and vinegar in another.
UPDATE: We will resume the 2-stage fill method in May 2019 and continue to work with co-packers who can maintain the original appearance of this product. Customer comments are very helpful so let us know what you think.
