We use a hot variant of Hatch Chile called Matador, which has the perfect heat profile for a hot sauce and carries the flavor of the roast all the way through to the end.
All Hatch Chile used in our sauces is sourced directly from Hatch, New Mexico, from Adam's Produce. We travel down to Hatch yearly to pick up van loads that we drive back to roast and make our sauce in Salt Lake City.
